100% Bitner Vineyards Chardonnay. Aged sur lees for 36 months, riddled by hand, disgorged by hand, and finished with 14g/l sugar. Showcasing the high acidity of this vintage can stand up to a sugar addition and not taste the least bit sweet. Pear compote and apple strudel dominate with pops of fresh white nectarine. These bubbles are fun but still complex, like the day stretch on the main Salmon above Riggins.
